A Cool New Chicken Recipe…Tastes Creamy Without The Calories!

As someone who typically eats clean and healthy, I eat chicken almost every day. The typical routine is broiled, with some lemon pepper, or some Miss Dash, or a little garlic salt. I am totally fine with the taste, but I am human, and like everyone else, once in awhile I get bored with my food.

I found this really cool recipe on an Instagram site called Busy Girls Eat Clean. These two girls in Arizona, who lead very busy lives, post easy, healthy clean recipes on their site so people can see how easy it is to make easy, healthy food. I liked this recipe because it only uses 5 ingredients and gives the chicken a creamy coating with out the “cream.” Plus it is really filling. You can add a side of more vegetables or some whole grains if you choose. Check it out…

CREAMY ARTICHOKE BROCCOLI CHICKEN

2 boneless, skinless chicken breasts

2 tbsp. nonfat plain Greek yogurt

3 tbsp. Dijon mustard

5 medium broccoli florets

1 small jar of marinated artichoke hearts (about 1/4 cup)

Place the chicken breasts on foil in a cooking pan. Grind the broccoli up raw in a food processor. In a separate bowl, put the artichoke hearts, greek yogurt, and dijon mustard. Then pour the ground up broccoli in and mix it all together. Coat top of chicken breasts with the mix. Bake for 350F for 16-18 minutes (until top is golden brown and chicken is cooked through.)
