Dragonfruit Cauliflower Smoothie Bowl
In a quest to create my own pretty smoothie bowls, I have been spending some time in the kitchen playing with ingredients that not only don’t melt at the drop of a hat, but also taste good and are, of course, somewhat healthy and satisfying.
Hanging out with my girlfriend in Arizona, we went grocery shopping at her local Sprouts Farmers Market and found some pretty solid goods. I chose options that are not only seasonal, but play well together (ie: taste good!)
Quality mentionable ingredients in this bowl;
- Figs: low in calories, high in fiber and potassium, which supports heart and muscle function.
- Dragonfruit: fun and colorful, also high in fiber, known for antioxidant and antibacterial properties.
- Pomegranate powder: also high in antioxidants, but as a powder, mostly used for color.
- Camu powder: 60 times the vitamin C of an orange! That is enough of a reason to use it alone. Also, known to be anti-inflammatory and helps reduce mood swings and prevent cognitive disorders.
So first, I chop up the dragonfruit and figs into the shapes I chose to use. I actually found it helpful to set the items I wanted to use as toppings out on a plate first so they are ready once I pour the smoothie portion into a bowl.
Next, I add the smoothie ingredients into a blender. You can use a high powered blender or food processor for the best results. Once your smoothie is blended to your liking, pour it into the bowl you chose to use, and add the toppings quickly before the smoothie starts melting.
After doing this a few times, I can tell you items like frozen cauliflower, frozen banana, etc…are great because they stay gelatinous and don’t get as melty as fast.
Then, you take your bowl somewhere pretty for pictures!!
Dragonfruit Cauliflower Smoothie Bowl
- 1/2 cup milk of choice
- 1 frozen banana
- 2 packets Pitaya Plus frozen dragonfruit
- 1 cup frozen riced cauliflower
- 2 tbsp. Navitas Naturals pomegranate powder
- 1 tsp. Navitas Naturals camu powder
- 1/2 fresh dragonfruit, sliced
- 1/4 cup fresh blueberries
- 2-3 fresh figs, sliced
Sliced up the dragonfruit and figs in the shapes and sizes desired. It would be ideal to place them on a plate ahead of time along with the blueberries.
Mix the milk, banana, dragonfruit, cauliflower in a blender along with the powders if you chose to use those. Blend to desired thickness and them pour into a bowl. Add the toppings and ENJOY!
