Ground Turkey and Zucchini Burgers…The Perfect Summer Dinner!
Like most people who eat healthy, I too, get tired of the same chicken and salmon dishes. Lean ground turkey is a great option. My favorite is the Empire kosher white ground turkey, because it is lean but still has flavor. I can cook this turkey in many ways. One of my favorite ways is to cook this ground turkey is with marinara, fresh basil and garlic and use it on top of spaghetti squash. But I found another way that is delicious and great for a summer time lunch or dinner meal.
This recipe is for a ground turkey burger mixed with chopped up zucchini. It is great because you can get some veggies in your meal if it is otherwise lacking (especially if you have kids who are stubborn about eating them!). Not to mention, it makes the burgers more moist and flavorful. You may ask…why zucchini? It is kind of random, however, one cup of zucchini has 36 calories and 10% of the RDA of dietary fiber, which aids in digestion, prevents constipation, maintains low blood sugar and curbs overeating. Zucchini are also known to lower cholesterol and promote cancer prevention. Need I say more?
Ground Turkey and Zucchini Burgers
16 ounces of white ground turkey meat
1 large zucchini
3-4 tablespoons of chopped white onion
1-2 tablespoons of chopped garlic
1/2 tsp of sea salt
1/2 tsp of pepper
Put the zucchini in a food processor or high powered blender until it is finely chopped. Place it into a large mixing bowl. Mix the onion, garlic and turkey and spices in with it. Make 8-10 small patties. Grill or heat on high on a sauté pan on both sides until cooked. For sauces, your best bet is some dijon with a little greek yogurt or some good old organic ketchup will also do just fine.
