Carrot Cake For Breakfast??

Image 1Anyone who knows me well knows I am a sucker for a good piece of carrot cake. I don’t know what exactly it is about that specific cake…probably the cream cheese frosting (which sadly, this recipe does not have), or the perfect balance of nuts and carrots and sweetness…yummy! Anyhow, I was up early this morning looking at breakfast recipes when I stumbled upon this little treasure.

Who would have thought to make carrot cake OATMEAL? A true genius, that’s who. I never really thought about it, until now. It is basically all the ingredients that make carrot cake amazing added into oatmeal.

Some of the awesome ingredients in this recipe are as follows:

Carrots-high in fiber and beta-carotene, give the oatmeal that carrot cake coloring.

Coconut flakes-also high in fiber and medium chain triglycerides, which are absorbed directly by the liver and not stored in the bodies fat cells.

Walnuts-which are anti-inflammatory and said to help decrease type 2 diabetes and cancers.

Cinnamon-also anti-inflammatory and said to help lower blood sugars.

So, like I said, a simply divine breakfast (or lunch or dinner, depending on what you like) idea. Here is how you make this delightful concoction.

CARROT CAKE OATMEAL

1/2 cup oats
1.5 cup almond milk
1/4 cup chopped carrots, cooked
1/4 cup egg whites
1/4 tsp coconut extract
1T shredded coconut
1T walnuts (I used slivered almonds because I didn’t have any walnuts, but walnuts are ideal!)
1 packet stevia

Directions: Place oats, carrots, and milk in bowl and cook in microwave for 1 minute. Add egg whites and cook for another 30 sec-1 minute. Remove and pour into blender and blend until smooth. Stir in all other ingredients. Top with nuts or extra coconut if desired.
Optional: can use honey instead of stevia

SIDE NOTE- If you are not a fan of the microwave, you can pulverize raw carrots in the blender. It is just a matter of how awesome your blender is or if you mind a kind of chunky texture to your oatmeal. I also don’t recommend using any egg whites if you are not going to cook them. You could always scramble them if you wanted or not use them at all.
