QUICK AND EASY DINNER ALERT! Chicken Chickpea Medley and Simple Arugula Salad

Image 1-1So I just got back from a long weekend out of town and had a busy Monday ahead. I wanted to make something quick and easy I could have for lunch today and possibly tomorrow and maybe even the next day that has protein and fiber and some healthy carbohydrates.

You know when you are working and lunch just ends up not being a priority? Well, you want to keep yourself fueled. If this means you cannot tear yourself away from your work, you should have something at your desk you can munch on that is healthy and will satisfy you until a later snack and/or dinner time arrives.

This dish above is a little something called Chicken Chickpea Medley. Of course you can add more veggies, or eliminate the chicken if you desire, but I like it just the way it is. This whole recipe has 5 ingredients plus Mrs. Dash and a little salt and pepper if you desire.

CHICKEN CHICKPEA MEDLEY

2-3 chicken breasts, broiled or grilled

1 can of chickpeas (if you have time to cook them from scratch, you can do that as well, which is about 1.5 cups)

1 can of artichokes, halved

2-3 cloves of garlic, chopped

Mrs. Dash original flavor

2 tbsp. grape seed oil

A little salt and pepper if you wish

Sprinkle Miss Dash on chicken breasts. Place them in a foiled pan and cook in the oven on broil for 12 minutes.

In a pan on the stove, put grape seed oil, garlic, chickpeas and artichokes on medium heat for about 5 minutes. Then put on low heat and wait for chicken to be done. Then add the chicken for another minute or two. You are done! Enjoy!

OH YES! The arugula salad on the side. That is just the rest of some arugula I had in the fridge, with chopped avocado and a dressing of squeezed lemon and a little extra virgin olive oil. I love adding greenery! It is amazing what a little salad can do to a meal.
