A sweet summery treat with the addition of seasonal fruit

Ingredients
  • 2 lbs Rainier Cherries pitted
  • 1 medium lemon juiced
  • 3/4 cup gluten-free oats
  • 1/2 cup almond flour
  • 1/3 cup chopped walnuts
  • 1/4 cup brown sugar can use a full 1/2 cup brown sugar instead of allulose if desired
  • 1/4 cup allulose can use a full 1/2 cup allulose instead of brown sugar if desired
  • 1/3 cup coconut oil
  • pinch 0f kosher salt
Instructions
  1. Preheat oven to 350F

  2. Spray an 8x8 pan with cooiking spray

  3. Add pitted cherries and juice of one lemon

  4. In a large bowl, mix the oats and almond flour

  5. Then add the walnuts, sugars and last, the coconut oil

  6. Pat it down, then place it in the oven for 25 minutes

  7. After cooking, let the crisp cool 5-7 minutes before serving.

  8. Add your favorite ice cream as a topping!
