Five ingredients (plus a little oil for the pan!) is all you need for these healthy and delicious do-it-yourself pancakes!
In a high powered blender or food processor, blend all of your ingredients except the butter for 30-45 seconds.
Heat 1 tbsp of butter or oil on medium heat. Save the second tablespoon for later!
Ideally, cook one pancake at a time in your pan, approximately 6 inches in diameter. Make sure your heat is on medium/low setting so you don't burn the pancakes!
Cook on EACH side for a minute and 30 seconds.
After cooking the first three pancakes, add the second tablespoon of butter or oil to cook the second three pancakes. There should be six pancakes total.
Drizzle with your favorite syrup and serve!
