Celebrate Fall…With Salad!

Although fall technically beings on September 21st, the signs are already here. In some parts of the world, the signs start with weather changes. While the weather does change a little in Southern California, I more or less can see the signs of fall at the grocery store, when the fall produce hits the shelves in full force. Persimmons, plums, figs, kale, arugula…these are some of my favorite fall produce.Image 1

As the weather starts to get a little bit more brisk, I will plan to add heartier recipes to my blog, such as soups and chilis with root vegetables, but today I wanted to add a salad that incorporates some great fall produce and can be very cleansing before a heavy meal, or as a meal, if you wanted to add a lean protein and/or whole grain to it. This salad can always be used in a cleanse on its own as a meal, since the produce used can be very filling and is chock full of vitamins and minerals.

FALL SALAD

2 cups kale, chopped
1 apple, chopped
1 small avocado, chopped
1 lemon
2-3 tablespoons of olive oil
salt and pepper to taste (I used lemon pepper)

Chop the kale, or buy it chopped. Squeeze the lemon into it and the olive oil. Massage it with your hands and wait 5 minutes. (THIS STEP HELPS CUT THE BITTERNESS OF THE KALE!) Then add the apple and avocado. Then sprinkle in the salt and pepper. Toss and serve.
