Strawberry Coconut-sicles!

Ever since I got my new popsicle molds, I have been obsessed with finding cool new popsicle recipes to try. The chocolate protein berrysicles were cool, but I admit the protein powder makes them a little gritty, so I decided to take a suggestion from an old nutrition colleague and make something a little more popsicle worthy.

This recipe is very simple, and after trying one, I can say it tastes good. Since I used REAL FRUIT, they are not as sweet as some may like. Either you get used to the taste of real sugar from real foods, or you can feel free to add your own, if that is what you desire. I like the texture of the coconut in these, and the usage of coconut milk also makes the popsicles a little “creamier.”

 

STRAWBERRY COCONUT-SICLES

1 cup coconut milk ( I used unsweetened, but feel free to use sweetened if you want the extra sugar)

2 tablespoons of coconut flakes

1 cup strawberries

Blend in a blender or food processor and pour into the molds. Freeze overnight.
